It all began with great-grandmother Margherita, who opened a small inn offering the first tourists the products of her own farming and pastoral work: milk and cheese served with classic polenta. The mountain pasture had been inherited from her maternal great-great-grandfather, who became its owner in 1871 by paying the amount due to the community for the construction of Macugnaga’s parish church. Since then, six generations of the same family have been cooking Alpine specialities for those who come up here to admire the imposing east face of Monte Rosa.
Burki cheese and young toma
The decision to continue the cheesemaking and livestock-farming tradition allows the farm stay to still offer its own locally produced toma today, along with cured meats from the farm, all paired with the distinctive coarse-grained polenta prepared according to tradition. The farm stay on the mountain pasture is open every day from 10 June to 8 September and at weekends, while cheesemaking courses are held in the mountain dairy during June, July and September for those who wish to learn the secrets of production first-hand.
