You will need

Method

Prepare the potatoes

Peel the potatoes and cut them into thin slices.

Slice the onions

Thinly slice the onions.

Layer the ingredients

Melt the butter in a large frying pan and arrange alternating layers of potatoes and onions, seasoning lightly with salt.

Cook

Cook over a medium-low heat, covered, for 25-30 minutes, until the potatoes are tender, stirring occasionally.

Add the cheese

During the last few minutes, add the cheese in small pieces and let it melt.

Serve

Serve piping hot directly from the pan.

Tips

Cut the potatoes into thin, even slices for uniform cooking.

Variations

Diced lard or browned pancetta can be added for a richer version.

Storage

Best enjoyed immediately after cooking, while the cheese is still melted and stringy.
