Walser Krussli
Krussli are a dessert from the Walser tradition: a simple pastry made with water, flour and eggs, flavoured with grappa, cut into pieces, fried in lard and sprinkled with sugar.

Before you start
Method
Make the dough
Mix the flour and eggs, add the water little by little and finally the grappa. Work until you have a smooth, firm dough.
Add only the water needed to make the dough workable.
Leave to rest
Cover the dough and leave it to rest.
Roll out and cut
Roll out a thin sheet of pastry and cut it into small irregular pieces or diamond shapes.
Fry
Heat the lard and fry a few pieces at a time until golden. Drain them well.
Do not overcrowd the pan while frying.
Finish
Sprinkle the Krussli with sugar while still warm and serve.

Tips
Roll out the pastry thinly and fry at a steady temperature. Add the sugar while the Krussli are still slightly warm.
Variations
The shape and size can vary according to family tradition; the common feature is the grappa-scented fried pastry.
