Piedmontese Bonèt
Bonèt is a Piedmontese spoon dessert baked in a bain-marie, made with milk, amaretti, cocoa, coffee, eggs and rum.

Before you start
Method
Heat the milk
Bring the milk to the boil and leave it to cool.
Prepare the biscuits and flavourings
Finely crumble the sponge fingers and amaretti, then mix them with the milk. Add the liquid coffee, ground coffee and rum.
Prepare the base
Whisk the sugar, cocoa and eggs until smooth and light.
Combine the mixtures
Gradually incorporate the flavoured milk into the eggs, mixing carefully.
Caramelise the mould
Prepare the caramel and coat the pudding mould.
Take care with the very hot caramel.
Bake in a bain-marie
Pour the mixture into the mould and bake in a bain-marie in a preheated oven.
Cool and turn out
Leave to cool completely, then refrigerate before turning out and serving.
Good to know
Tips
Do not overcook the bonèt: it should remain soft. Chill it thoroughly before turning it out.
Variations
There are numerous Piedmontese variations, including coffee versions and interpretations with different proportions of amaretti and cocoa.
Storage
It keeps in the refrigerator for 2-3 days, well covered.
